About Us

Ilan Cohen is a self-taught chef who began his culinary journey in Jerusalem, Israel, more than 20 years ago. Together with his wife, Lauren Cohen, he opened Falafel Bistro & Wine Bar in 2007 DVASH’s sister restaurant bringing authentic Israeli flavors to the South Florida community and building a loyal following that has grown for more than a decade.
 
DVASH, located in Boca Raton, is the result of a true family collaboration. Ilan and Lauren’s children, Anabel Cohen and Noam Cohen, play an active role in the business, working alongside their parents in both the creative and day-to-day operations. From concept and menu development to brand vision and guest experience, every detail is shaped by the family’s shared passion for hospitality.
 
Together, the Cohen family has created a modern take on Mediterranean cuisine designed for sharing, inspired by their roots, and crafted with the freshest seasonal ingredients. At DVASH, every dish reflects family, tradition, and a love for bringing people together, finished with one signature touch: a little bit of honey.
